Vault: Thai-Japanese fusion topped with glam!

I walked into Vault with high expectations and walked out with quite an experience.
Located on Kemal Ataturk road, this new high-end fine-dining restaurant in town has generated a lot of buzz, offering Thai fusion with Japanese influences, creating an intriguing menu.
The interior is sleek and chic, with a staircase surrounded by water fountains leading to vault-style doors. The black-and-gold theme creates a glossy, modern vibe. There's a waiting area, bar, and various seating arrangements, including booths. The music was excellent, and I hear they also feature live performances.
Both the drink and food menus were intriguing, with plenty of fusion dishes and unique combinations. The mocktails, like Mishti meye and Velvet, had fun names and were worth trying.
As for the food, I'll start with the highlights: the Hilsha fishcake lollipop was delicious—small boneless Hilsha cakes topped with green chilli and mango, bursting with flavour. The seared tiger prawn was my favourite; fresh prawns paired with beetroot ponzu and citrus salsa made for a perfect combination. The chocolate mousse was smooth and rich, with a playful crunch from the edible soil, making it a perfect dessert.
Some dishes, like the Smoked baby corn, Betel leaves tempura, and chanachur-crusted broccoli, were interesting fusions but not particularly memorable. The Nest, a signature dish, was visually impressive, but a better introduction to the half-cooked egg might have been helpful, as it wasn't quite to my taste.
Prices are on the higher side—small bites are around 1000 taka, and appetizers are between Tk 1000 and 2200. Prices of the mains start around Tk 1800 and go up to Tk 3200.
The food was highly innovative and versatile, with a 10/10 on plating and presentation. Some dishes tasted good enough to wow us, while others were alright. But kudos to the team for being brave enough to attempt all these experimental dishes.
Vault is the perfect destination for a special dinner this week. Open from 7 pm to 10.30, it accepts guests both by reservation and walk-ins.
